STH (south) is a new wine to the portfolio in 2020, sourced from the Derwent and Coal River Valley in southern Tasmania.
Most of this wine was a proper Coal Valley vs Derwent Valley co ferment, conveniently they were both ready at the same time, and there was tiny yields so they fitted real nice and snug together in my favourite fermenter. There was a slightly later, and small pick from the Derwent parcel that has provided the whole bunch component here. The blend is around 25% inclusion all up, which seems to be soaked up easily by the fuller, richer flavours and tannin that come from the black cracking clay soils that the Coal Valley is famous for.
A special little project that has been years in the making.
