A new wine to the TTT family, the Ziggurat Chardonnay has been produced with texture, freshness & flavour in mind.
25% of this wine was fermented on skins; a whole berry ferment, looking for gentle extraction. Basket pressed to seasoned oak, this wine sat on lees for 3 months after spontaneous MLF occurred.
The balance of the wine is whole bunch pressed, natural ferment in seasoned, large format oak, with partial MLF.
These parcels where blended carefully to find balance between texture and purity.
