The TMV16 Pinot Noir features the fundamental components of our house style. It has a whole bunch backbone, 20% inclusion, which works in combination with a fresh, fruit driven lift due to partial carbonic maceration. The wine was worked very lightly during fermentation, receiving only pump overs until a few light plunges prior to pressing well before dry. Fermentation was completed in French oak barriques, 20% new. It is soft and textural on the palate, a result of lees contact for the whole duration of maturation. This wine received no finings, minimal sulphur dioxide and bottled unfiltered.
